Smoothie! Sweet Popeye
Remember Popeye? He was a dedicated vegan cartoon character who got all his energy and robust muscles from regularly gulping down cans of spinach. I’ve posted a recipe for a drink in the past that I call sweet popeye. I had a plain “popeye” smoothie at a raw restaurant that was awesome awhile ago that had only coconut water, coconut meat, and spinach. I loved it and when I got home I tried a couple of my own versions. Sometimes I add pineapple. This lovely version has one banana and some spirulina as well. I’m sure mango would be a fun addition as well. This version I like because the spirulina really does give you an extra super heroine boost. I also enjoy drinking it sometimes after workouts. Ingredients:
1 Thai coconut (water & meat)
1 banana
1 medium to large handful of spinach
1 Tablespoon of Spirulina
Blend all ingredients thoroughly. Serve & Enjoy!
JUICE! Lemon Pear Refresher
3 Pears
1 Lemon
6-7 Stalks of Celery
4-5 Carrots

It’s Vday! Making a Love Juice
Happy Valentines Day veggie lovers! Hope that everyone shares the love with the special people in their lives, and THE most special person, YOU. Remember that choosing to eat foods full of life force is definitely a way to show yourself some love on a regular basis, and can also help you stay in that love vibration. I’m juicing today and will most likely make some Love Juice which includes some red fruits and veggies I have in the kitchen right now, recipe below. Feel free to have fun and make your own versions of love juice! I want to hear about them, post them on the Facebook page or comment right here! It can be a juice or smoothie. A smoothie with raw cacao sounds pretty groovy right now…Hmm…perhaps dessert?

Love Juice
1/2 medium-sized beet , 1/2 lemon, 1 red pepper, 2 red apples, 7-8 carrots, ginger
Run all ingredients through a juicer. Strain and serve 🙂

Blueberry Banana Coconut Smoothie & Yogurt
Yesterday morning after my super intense weight training class, I came home to make my post-workout smoothie and posted about it on Facebook. Shout out to Brooke on the Raw Girl Facebook page, who wanted the recipe. So funny thing is, I started out making a smoothie…and I ended up making yogurt which was equally as delish, just a lot thicker. I’m sure you’re wondering how this happened? Well, I put in the ingredients listed below as usual, but what was different was the coconut. If you pick up a young Thai coconut that is smaller than the others, usually that coconut is more developed. The coconut meat inside is thicker and harder to remove, but it’s totally possible to get out if you put a little extra muscle into it. My coconut yesterday morning had some thick coconut meat going on, so when I blended everything together I got…blueberry banana coconut yogurt. Another way to make this happen, on purpose, is to add an avocado! This works for any fruit smoothie concoction and automatically will give you a creamy yogurt-y consistency if that’s what you’re in the mood for. All that said, recipe below for smoothie. If you want yogurt add an avocado, or get a small young Thai coconut with thick coconut meat inside! Want to up the ante, do like I do and add in some superfood powders. -XoXo Raw Girl
Ingredients:
1 Young Thai Coconut
2 ripe bananas (1 works as well)
1/2 cup to 1 cup of blueberries
Put bananas and blueberries in blender. Hack open Thai coconut while keeping your fingers and extremities in tact! (There are a lot of great videos on how to do that. If your interested and have never done so, go to You Tube and search “How to Open a Young Thai Coconut” and tons of videos will pop up to give you an idea.) Pour coconut water into blender. Scrape the inside of the coconut and add the coconut meat into the blender. Blend, pour, enjoy!

Perhaps it’s because I have a knack for making vegan pies that are guiltless, only take 20 minutes to prepare, and so yummy they make you wonder why you ever bothered with the traditional version. How to Make a Watermelon Mojito
Today is Day 3; the last day of this watermelon fast is finally here! Last night I got creative and concocted a watermelon mojito. This morning I continued to be inspired and whipped up an equally refreshing blend of watermelon, lemon juice, with a hint of cilantro. I feel like this fast is turning me into a watermelon bartender! Feeling good today, glad to be coming down of the fast tomorrow because I have an acting gig and need to keep my energy up on set. As promised here’s the recipe for the mojito. I’m going to try the watermelon soup from my last post tomorrow and see if it’s any good, will report back. Watermelon Mojito
4-5 cups chopped watermelon
1/2 lime juiced (use the whole thing if you want it tangier)
2 – 3 sprigs of fresh mint
1 teaspoon grated ginger

How Many Ways Can You Eat a Watermelon?
It’s Day 2 of the Watermelon Fast. W-Day number one has come and gone, and I have nothing on my mind but watermelon so I figured I might as well blog about it. If you are on the Watermelon fast journey now or if you plan to attempt it later, you may ask yourself: how many ways can you eat a watermelon? I decided to research some recipe combinations that may add just a little bit of variety to the watermelon fast. Two have cucumber or cucumber juice incorporated, so that may be cheating. Might save the watermelon soup for Thursday when I am coming down off the fast. I plan to spice it up tonight and make a smoothie with watermelon, lime, and mint! Bring on Day 3, I’m ready. - Watermelon Slushy -watermelon, ice cubes, lime juice. Blend!
- Watermelon Soup – 3 cups watermelon, 1/2 lime juiced, 1/4 cup cilantro, 1 small cucumber diced. Blend!
- Watermelon Smoothie – watermelon, fresh mint, lemon juice, ginger. Blend!
- Watermelon Juice – watermelon, cucumber, lime. Juice!
The Ultimate Beauty Salad
Last week I had a great time hanging out with a good friend, and she was game to try one of my salads. I warned her it would be one of the best salads she’d ever had. We got together a bunch of stellar ingredients, and while making it I realized that the salad was packed full of veggies that offer the amazing beauty minerals that I have been writing about recently. Below is a list of the ingredients in the salad and the nutrients they offer to optimize your beauty. Besides being good for you this salad was lip-smacking good! The Ultimate Beauty Salad
To prepare, wash all veggies thoroughly. Wash mixed greens and arugula and toss together in a large salad bowl. Chop up green and yellow squash, red bell peppers, and olives. Add toppings to greens, pour on olive oil, add in sea salt and curry, and squeeze the wedge of lemon. Massage the veggies with your hands for a few minutes. Add in a couple teaspoons of nutritional yeast and toss together. Use a veggie grater to finely grate beets on top, sprinkle in some pumpkin seeds, and add in fennel leaves for decoration. Enjoy!
Ingredients:
- Mixed Greens – Vitamin A
- Arugula – Sulfur
- Red Bell Peppers – Silicon
- Avocado – Sulfur
- Fennel – Vitamin A, C, sulfur
- Pumpkin Seeds – Sulfur
- Beets – Vitamin A, Calcium, Phosphorous
- Green & Yellow Zucchini – Vitamin A
- Olives (black and green) – Sulfur
- Wedge of Lemon (squeeze juice)
- Olive Oil (extra virgin, 2-3 capfuls) – antioxidants
- Yellow Curry (1 teaspoon) – antioxidants
- Celtic Sea Salt ( a couple pinches)
- Nutritional Yeast (3-4 teaspoons) B-complex Vitamins, Calcium, Potassium, Phosphorous etc.

Making a Green Smoothie!
I am gearing up for my annual fast into the new year! Last year it was 10 days. This year I think I may do 3 days of blended foods, 7 days of liquids/juice only, and 3 days coming off of the fast with blended foods and perhaps veggie broth as well. The target start date is December 23rd, and I will start coming off the fast on January 2nd. Trying to get mentally prepared and incorporating more liquid foods into my diet. Today I made a Tropical Green Smoothie. Ingredients: 2 bananas, 1 date, 1 mango, water from 1 Young Thai Coconut, 3-4 Kale Leaves.
When making green smoothies, it is recommended to use about 60% fresh fruit and 40% green leaves. Take care not to include any starchy vegetables such as: broccoli, cabbage, carrots, beets, cauliflower, pumpkin, corn. These types of vegetables require the body to use different enzymes to break them down, and if mixed improperly can lead to fermentation and gas.
